Embedded means the Stripe checkout is embedded in the booking page and the booker makes the payment directly in the booking page.

Hosted means the Checkout is hosted by Stripe, the booker is redirected to Stripe to make the payment.

Not all Stripe payment methods are supported by the Embedded checkout. If you want to use Stripe local payment methods you need to use the Hosted checkout.
